Macadamia and white chocolate Cookies
These cookies are creamy, sumptuous and will have you going back for seconds! The texture of these is probably my favourite part of them - silky creamy white chocolate mixed with the crunch of the macadamia nut - it's just yummy!
Ingredients:
250g white chocolate
100g macadamia nuts
80g caster sugar
80g brown sugar
150g salted butter, softened
1 egg
1/2 tsp bicarb of soda
1/4 tsp salt
225g flour
1tsp vanilla extract
Method:
Combine the two sugars in a bowl and stir together
Add the softened butter and cream together until working smoothly
Add in one egg and the vanilla extract and mix until wet combined
In a separate bowl mix the flour, salt and bicarb of soda together until well combined
Gradually add the flour mixture to the butter/sugar mixture until well combined and smooth
On a chopping board, lightly chop the white chocolate and macadamia nuts into bitesize pieces
Add the nuts and chocolate to the cookie mixture and combine until the pieces are scattered evenly
Line a baking tray with baking paper
Take tennis ball sized amounts of the mixture, roll into balls in your hand and place on the tray, leaving enough space for the cookies to expand.
Chill for 15 minutes
Meanwhile, preheat the oven to 200degrees Celsius
Place the baking tray of cookies in the centre of the oven and bake for 10-15 minutes or until golden brown
Set aside to cool - enjoy!
