Broccoli Salad

I discovered you could eat broccoli raw about a year ago and it has changed my life. This salad makes for a great side with a roasted joint or bring it out at summer BBQs in the next few months. 


Ingredients:

Half head of broccoli, finely shredded
Small bag of mixed salad leaves
50g raisins/dried cranberries
50g feta, cubed
1 baked sweet potato, diced

Method:

- Combine all the ingredients into a large bowl

- Stir through and serve
