Lentil, Turmeric and Cabbage Soup

 This is a hearty soup for when you're feeling cold and in need of a vegetable boost pick-me-up. Packed with vitamins, this veggie soup is one to bring out whenever you're feeling not your best.


Ingredients:

2 onions, diced
2 medium carrots, cubed
2 stalks celery, diced
1 tsp minced garlic
Drizzle oil
1 tsp turmeric
1 tsp paprika
3 large leaves of Savoy cabbage
100g lentils
Vegetable stock cube, dissolved in 1 litre water


Method:

- In a large pan heat the oil, garlic, turmeric, paprika, and onions until fragrant and thoroughly combined.

- Add in the carrots and celery and cook until starting to soften

- Tip in the lentils with a dash of water and cook until the edges start to go translucent.

- Add in the remaining stock and simmer until the lentils are soft and cooked through

- Finely slice the Savoy cabbage and stir through the soup. Simmer for a few minutes until the cabbage starts to soften.

- Season with salt and pepper and serve
