This is one filling meal! Spinach, tomato and rigatoni pasta all combined to make this hearty family dish - and made in under 20minutes!
Ingredients: 225g pork sausage meat 1 tsp balsamic vinegar 200g rigatoni pasta Salt and pepper Drizzle of oil Half can of chopped tomatoes Chicken stock cube dissolved in 50ml of water 100g baby spinach 1 tbsp tomato puree 1 tbsp sun dried tomato paste Pinch of sugar Italian hard cheese to top
Method: • Drizzle a 1tbsp oil into a pan on medium high heat and fry the sausage meat until cooked through and starting to brown. • Meanwhile, boil the pasta in salted water until cooked through • Add the balsamic vinegar to the sausagemeat and cook until evaporated • Stir in the tomato puree and fry for a further two minutes • Add the chopped tomatoes, chicken stock dissolved in water and a pinch of sugar. Bring to the boil and stir until thick and tomatoe-y • Add the spinach in until wilted, and then stir through the sun dried tomato pasta. Season to taste • Drain the rigatoni and stir through the sauce making sure to coat it all. • Serve with hard cheese grated on top!
