Prawn Stir Fry
Christmas is over and we're making our way back into the routine of home cooking again - first thing's first let's use up all those leftovers! We had a buffet with a prawn ring this year so those beauties needed using up quickly - there's not much you can't throw in a stir fry so I got the wok out and vĂ´ila! Prawn stir fry for lunch.
Ingredients:
25 king prawns Prawns
1 courgette
1 red onion
2 carrots
2 Handfuls mushrooms
4 baskets of noodles
1 tsp miso paste
1 tsp minced garlic
1tbsp sweet teriyaki sauce
Drizzle of oil
Soy sauce to taste
Method:
1. Add sweet teriyaki sauce, miso paste and oil to a wok. Heat until bubbling.
2. Add onion, carrot, courgette and mushrooms and stir fry until heated through but still crunchy
3. Add in prawn and stir fry until hot through. Meanwhile boil noodles in salted water until soft
4. Drain noodles and add to wok. Mix together with soy sauce as desired and serve.
