HEALTHY TODDLER SNACKS | EGG CUPS | OAT BISCUITS
Providing your children with healthy snacks can be really difficult. Grab and go food is often laden with processed sugar and a bunch of unknown ingredients, and those products that you can buy that are healthy end up being a strain on your purse. Well, here are 2 healthy snacks that are food for you body and your wallet. Enjoy!
Ingredients:
4 eggs
1 cup cooked ham, cut into bite size pieces
1 cup leafy greens chopped into small shreds
Spray oil
Method:
- Preheat oven to 200degrees celcius
- Crack eggs into bowl and stir to combine
- Add ham and spinach into bowl and stir to combine
- Spray a muffin tin with oil
- Pour mixture into muffin tin, making sure to leave a 1cm gap from the top
- Cook for 20-30 minutes until golden ontop
Tweeks:
For a vegetarian option, add another vegetable portion. Make sure it's precooked if necessary.
Add a sprinkle of cheese to the top!
*These can be kept in the fridge for 3 days in an air tight container. If you prefer to eat them warm simply microwave for 30 seconds.
OAT BISCUITS
Ingredients:
3 bananas
2 cups oats
1 cup dark chocolate
Method:
-Preheat oven to 200degrees celcius
- Open bananas into a large mixing bowl. Mash with a fork until a paste consistency
- Add the oats and combine until all the oats are coated in the banana mixture
- Using hands, shape mixture into cookie shaped biscuits and place on a lined baking sheet.
- Bake in the oven for 20-30 minutes, until the oats are browned and the biscuits are firm
- Allow to cool on a wire rack
- Once cooled, melt the dark chocolate in the microwave for 1 minute
- Dip half of the cookie in the mixture, place on a plate and allow to cool in the fridge until the chocolate has hardened.
Tweeks
For extra sweetness add 1-2 tablespoons on maple syrup or honey
Swap out half the cup of oats for half a cup of dried fruit such as apricots, raisins or mango.
*Store in an airtight container for up to 3 days.
